These fluffy, golden-brown greek donuts (loukoumades) are surprisingly simple to make and perfect for enjoying warm at home.
Ingredients:
- 520 grams all-purpose flour
- 50 grams sugar
- 1 teaspoon salt
- 1 packet active dry yeast
- 100 grams water
- 100 grams milk
- 1 egg
- 60 grams butter
- Vegetable oil for frying
- Granulated sugar
Equipment:
- Mixing bowl
- Whisk
- Donut cutter
- Frying pan or pot
- Paper towels
- Large bowl for sugar
Instructions:
- Prepare the Dough: In a large mixing bowl, combine the flour, sugar, salt, and yeast.Warm the water and milk slightly.Add the warm liquids, egg, and melted butter to the dry ingredients.Whisk until well combined.Cover the bowl with a damp cloth and let the dough rise in a warm place for about 1 hour, or until doubled in size.
- Shape the Donuts: Punch down the risen dough and roll it out on a lightly floured surface to about 1/2 inch thickness. Use a donut cutter to cut out the donuts. Alternatively, you can break off a piece of dough roughly the size of a heaping tablespoon, roll it on a flat surface with your hands and form it into a ring with your hands.
- Fry the Donuts: Heat the vegetable oil in a frying pan or pot to 350°F (175°C). Carefully drop the donuts into the hot oil and fry for 1-2 minutes per side, or until golden brown and puffed up. Remove the donuts from the oil with a slotted spoon.
- Drain and Coat: Drain the donuts on paper towels. While still warm, toss them in a bowl of granulated sugar, turning them to coat both sides.
- Serve: Enjoy the sweet and crispy loukoumades immediately.

- For a thicker coating of sugar, use a larger quantity of sugar or toss the donuts multiple times.
